Paleo Bruschetta Chicken


After looking at a few different recipes for Brushetta Chicken I combined a few together and gave it a shot.  To my relief it actually came out pretty good! Another hit with the husband which is really my main goal because I’m not the biggest tomato fan but even I really enjoyed it!

3 chicken breasts
2 medium-large tomatoes, chopped
1 small red onion, chopped
1 tsp balsamic vinegar
1 tbsp + 1 tsp olive oil
1/2 tsp basil
minced garlic (to taste, I just did a few shakes)


1. Brush Chicken Breasts with 1 tbsp olive oil, season with salt and pepper to your preference, and grill until cooked through.
2. While your chicken cooks mix your remaining ingredients together and saute for 3 minutes in frying pan.  When your chicken is done simply spoon your Bruschetta mixture on top of your chicken and serve.
